Also I would like for any visitors to put their email address in a box to contact them when the site is up and running.

Themeforest.net (http://themeforest.net/category/landing-pages) has some good landing pages for about $8-$10 that can be easily customized. All the landing pages come with a email address box and instructions on how to install/modify the templates. Let me know if you need help installing a template.

You can also do a search for Coming Soon / Under Construction templates for Wordpress. Most have an email box built into the design.
