I have seen some people quoting figures for the amount of pages Google returns for their domain name/search term. Is this common practice when trying to value a domain name? What value does this give?

it helps determine if there is a market for this kind of name...

if you get a few million pages then obviously the subject/keywords are used regularly and are obviously popular.

if you only get a few pages then its likely that its not that popular

i wouldnt put too much empasis on google terms popping up
along with the alexa toolbar, its a very poor way to value a domain

Some people use it, as Ciquala said, to find out (word) popularity and prospects for a name.
Also helpful for development of own site as it shows quantity of data resources.

On the other side it doesn't necessarily brings the demand view back which is the most important factor IMO.
The search engine results are pure supply numbers.
There are many cases where number of searches for terms are not backed with corresponding results at SE (lower results) and that gives a good opportunity for developing.
In such cases lower Google (SE) numbers actually bring more value to a domain name.

it is useful, SO LONG AS:

you put the words in quotes, i.e. "chicken pie"
and DEFINITELY NOT : chicken pie

Otherwise, you'll bring up all the sites which use those words in any order, split up, etc. Those sites would not be competing sites.

the best names for developing are ones which have few results using quotes, yet thousands of searches per month, which you can check using Overture's search tool, and roughly multiplying the number of searches by 5 to get an idea of total searches across the major engines.

type in key words and see how often they were searched for last month...

type in quotes for exact phrases

returns information for both singular and plural of key words
i.e. shoe & shoes will return the same result

typing in domain.tld will show if there are people typing in the domain itself into the search engine which is a good indicator if more technically competent people would type it into their browser (thus giving an estimate of type-ins).
